Black Bean and Corn Salsa....
I was at a get together, and their was this amazing Salsa there. As I am trying to find healthier things to eat and that taste really good, as I was introduced to this new recipe I wanted to share it with all of you and I hope that you will find it as satisfying as I did.
Black Bean and Corn Salsa aka Texas Caviar
1 bunch of cilantro (cut off the stems and chop into smaller pieces)
I can of corn (drained)
I can of black beans (rinsed and drained)
1/4 cup of red onion
4 - 5 Roma tomatoes (chopped)
2 firm avocados (chopped)
Put all of the above ingredients in a big bowl and then pour the dressing over it. Store in an airtight container. Can add garlic powder/salt/pepper to taste.
1/4 cup of vinegar
1 pkg of Italian dressing seasoning mix
1/2 cup of soy oil (or whatever oil you may have)
Make the dressing in an airtight container so that you can shake it to mix the ingredients before pouring it over the other stuff.
This is one of the best salsa's I have had. I know that at the get together it was served with tortilla chips but I actually made some chicken breast for dinner and then poured the salsa on top of my chicken and it was so good.
