Carrot-nut Berry Muffins

These homemade muffins are full of whole grains, nuts, and berries. They are a great snack, dessert, or breakfast!

  1. 1 ½ cups Old Fashioned Oats
  2. 1 ½ cups Frozen Blueberries
  3. 1 cup Ground Flaxseeds
  4. 1 cup Whole-wheat Flour
  5. ½ cup Brown Sugar
  6. 1 cup Finely Grated Carrots
  7. ½ cup Pumpkin Seeds
  8. ½ cup Sesame Seeds
  9. ½ cup Crushed Walnuts
  10. 4 TBSP Baking Powder
  11. 2 TSP Ground Cinnamon
  12. 1 cup Organic Soy Milk
  13. ½ cup Unsweetened Applesauce
  14. 2 Eggs
  15. 3 Egg Whites
  16. 4 TBSP Blackstrap Molasses
  17. 3 TBSP Olive Oil
  18. 1 TSP Pure Vanilla Extract

You may also need:

Bowl, Muffin Tin, Oven, Spoon

Step 1:

Line muffin tin with paper liners.

Step 2:

In a large bowl, combine oats, blueberries, flaxseed, flour, brown sugar, carrots, pumpkin seeds, sesame seeds, crushed walnuts, baking powder, and cinnamon.

Step 3:

In a medium bowl, combine soy milk, applesauce, eggs, molasses, oil, and vanilla just until evenly mixed.

Step 4:

Slowly mix the wet ingredients into the dry ingredients. Mix just until combined.

Step 5:

Using a tablespoon, fill each muffin liner roughly 2/3 full.

Step 6:

Bake at 350 degrees for 25 minutes.

Step 7:

Serve and enjoy!
