Ingredients:

  1. 3 sprays Vegetable spray
  2. 1 whole wheat flour tortilla
  3. 1 small tomato
  4. 1 cup baby spinach leafs
  5. ¼ cup black beans
  6. 2 eggs
  7. ¼ cup Goat cheese, crumbled
  8. 1 pinch Salt and pepper
  9. ¼ cup salsa

You may also need:

Plate, Skillet, Spoon

Step 1:

Spray a medium non-stick skillet with vegetable spray and heat over medium high. Sauté spinach and tomatoes until spinach begins to melt (approximately 1 minute).


Step 2:

Add beans and heat for another minute.


Step 3:

Beat eggs and add to skillet with spinach. Stir eggs until completely scrambled and dry.


Step 4:

Heat tortilla in microwave between two moistened paper towels for 15 seconds. Place tortilla on plate and put egg filling on the end closest to you. Sprinkle with goat cheese and wrap up by folding in each end and rolling away from you.


Step 5:

Place on plate, seam side down, or pick with a toothpick. Add salt and pepper (to taste). Serve with your favorite brand of salsa.
