BBQ Ribs Sue Chef Style

This may seem a bit like cheating because I am using a bottled bbq sauce. However, I always say if you can find a product that makes it better than you can..buy it!

- 2 1½ lbs racks baby back ribs
- ½ cup Sue Chef Ultimate Spice Rub (see additional recipe)
- ¼ cup brown sugar
- 4 cups Sweet Baby Rays barbeque sauce
You may also need:
Aluminum Foil, Grill, Kitchen Knife, Spoon
Pre-heat grill to medium.
Pull membrane from ribs by loosening a corner on the rib side and pulling with a paper towel to give you a good grip.
Mix spice rub and brown sugar. Rub ribs with spice mixture.
Allow the ribs to stand at room temperature for 20-30 minutes before grilling.
Place ribs on grill rib side down. Place a small disposable pan full of water on back of grill to give the ribs moisture while they cook. Close lid and grill for 45 minutes at 275 degrees F. Do not open lid, flip, prod, or poke for at least 45 minutes.
While ribs are cooking heat up the bbq sauce over medium-low heat.
Once ribs have been cooking for 45 minutes, open lid and brush on BBQ sauce. Grill another 5-10 minutes, adding BBQ sauce until there is a thick layer of BBQ sauce (approximately 20 minutes).
Reserve some bbq sauce for the table.
Remove ribs from grill and tent with foil. Allow to rest for 5 minutes, then cut into one rib pieces and serve with reserved bbq sauce.
