Veggie Lettuce Wrap

The reason brown rice has many more nutrients than regular white rice is due to the fact that brown rice has only the outer layer, called the hull, removed while white rice has been refined for convenience with several layers, thus removing more nutrients.

Recipe

Ingredients:

  1. 1 ½ cups rice
  2. 3 cups water
  3. 2 tbsp olive oil
  4. 3 small carrots, chopped
  5. 1 small cucumber, chopped
  6. 2 small tomato, chopped
  7. 12 leafs whole iceberg lettuce
  8. 2 tbsp red wine vinegar
  9. 1 tsp whole grain mustard
  10. ½ cup low fat shredded cheddar cheese

You may also need:

A Pot, Bowl, Kitchen Knife, Spoon

Step 1:

Bring water to boil and add rice.


Step 2:

While rice cooks, slice carrots and cucumbers into very thin strips. Quarter tomatoes.


Step 3:

Separate lettuce from head keeping leaves intact. Pick out 12 leaves that are bowl shaped.


Step 4:

Mix vinegar and mustard together to make dressing. Pour dressing over brown rice. Toss.


Step 5:

Fill each leaf with a spoonful of rice. Top with cheese and veggies. Roll and eat with your hands.
