The Perfect Beef or Veal Stock

  1. 4 pounds large beef or veal soup bones (beef shanks or short ribs)
  2. 3 medium carrots cut into chunks
  3. 3 celery ribs, cut into chunks
  4. 2 medium onions, quartered
  5. ½ cup warm water
  6. 3 bay leaves
  7. 3 garlic cloves
  8. 8 to 10 whole peppercorns
  9. 12 sprigs fresh parsley
  10. 12 sprigs fresh thyme
  11. 12 sprigs fresh rosemary
  12. 3 gallons cold water
