Quinoa Pilaf

Quinoa is a great base for a lot of different dishes. since it is full of protein, Quinoa is as healthy as it is versatile. Make sure to add spices near the end, or else the pilaf might be bland.

Cook Time: 20 Minutes

  1. 2 cups uncooked Quinoa
  2. 1 Medium-Large Onion, Red or Yellow Minced
  3. 1 Package of White (8oz) or Mini Bella Mushrooms Thinly Sliced
  4. 1 Large Red Bell Pepper Diced
  5. 4 Strips Bacon Chopped into 1/4” strips
  6. 2 Tablespoons Olive Oil
  7. 2 Tablespoons Curry Powder
  8. 2 Tablespoons Paprika
  9. Salt and Pepper to taste

You may also need:

A Pot, Slotted Spoon, Spoon

Step 1:

Wash and cook Quinoa according to box directions.

Step 2:

While Quinoa is cooking or cooling, cook bacon pieces in a large non-stick pot over medium-high heat. Stir constantly. Remove the bacon with a slotted spoon just before they brown.

Step 3:

Using the bacon grease, cook onions for 2 minutes. Add pepper and mushrooms and cook until mushrooms have browned. Salt and pepper taste.

Step 4:

Once mushrooms have browned, add back in the bacon pieces and cook until back is browned.

Step 5:

Add Olive Oil, then add cooked Quinoa into the pot. Mix in paprika and curry power. Cook and stir until all ingredients are well mixed. Salt and pepper one last time to taste.

Step 6:

When pilaf is heated through, serve with any dish or eat as a meal by itself. Enjoy!!
