I use lean pork tenderloin in this healthy and delicious Asian appetizer to keep the fat and calories down.

- 1 ½ cups coconut milk
- ¼ cup peanut butter
- 2 Tablespoons fresh lime juice
- ¼ cup soy sauce
- 4 cloves garlic, minced
- 2 Thai chile pepper, seeded and finely chopped
- 2 Tablespoons cilantro
- 1 × Salt
- 1 ½ pounds pork tenderloin, cut into 1-inch thick cubes
- 1 × Wooden skewers
You may also need:
Bowl, Sealable Bag
Combine all ingredients in a medium bowl. Add pork and let marinate 2 to 4 hours.
Remove the pork from the marinade and thread on skewers.
Serve with peanut sauce (see separate recipe).
