Pork Satay

I use lean pork tenderloin in this healthy and delicious Asian appetizer to keep the fat and calories down.

Recipe

Ingredients:

  1. 1 ½ cups coconut milk
  2. ¼ cup peanut butter
  3. 2 Tablespoons fresh lime juice
  4. ¼ cup soy sauce
  5. 4 cloves garlic, minced
  6. 2 Thai chile pepper, seeded and finely chopped
  7. 2 Tablespoons cilantro
  8. 1 × Salt
  9. 1 ½ pounds pork tenderloin, cut into 1-inch thick cubes
  10. 1 × Wooden skewers

You may also need:

Bowl, Sealable Bag

Step 1:

Combine all ingredients in a medium bowl. Add pork and let marinate 2 to 4 hours.


Step 2:

Remove the pork from the marinade and thread on skewers.


Step 3:

Serve with peanut sauce (see separate recipe).
