Grilled Pita Pizza
By Serves 6

Grilling the pita bread gives it a wonderful crispy crunch. Putting the tomatoes and basil on last ensures a nice balance of hot and cold.

  1. 4 whole tomatoes
  2. 1 whole red bell pepper
  3. ½ cup fresh oregano
  4. 4 whole whole wheat pitas
  5. 4 oz goat cheese
  6. 1 tsp red pepper flakes
  7. ¼ cup extra virgin olive oil
  8. 1 tsp salt
  9. 3 cups fresh basil

You may also need:

Butter Knife, Grill, Spoon

Step 1:

Shred oregano using kitchen shears.

Step 2:

Preheat a grill to medium. Brush both sides of the pitas with olive oil and grill until marked (2 to 3 minutes per side).

Step 3:

Crumble goat cheese and spread evenly among 4 pitas. Sprinkle with red pepper flakes. Drizzle 1 tablespoon olive oil over each pizza. Season with salt and pepper. Place pizza pitas back on grill and close the cover. Grill until the cheese melts (2 to 3 minutes).

Step 4:

Tear basil leaves with hands and top each pizza. Drizzle one more tablespoon olive oil over each pizza and serve.
