Knock Your Socks Off Pasta Sauce

You will absolutely love this pasta sauce because of the umami flavor it gets from fish sauce.

Recipe

Ingredients:

  1. 2 tbsp tomato paste
  2. 1 tsp red pepper flakes
  3. ¼ cup parsley
  4. 10 whole tomatoes
  5. 2 tbsp olive oil
  6. 1 cup onion, chopped
  7. 1 whole red bell pepper, chopped
  8. 6 cloves garlic
  9. 2 cups basil, chopped
  10. ¼ cup oregano
  11. 1 tbsp fish sauce

You may also need:

A Pot, Blender, Bowl, Dutch Oven, Food Processor, Kitchen Knife, Slotted Spoon, Spoon

Step 1:

In a large pot or Dutch oven over medium heat, cook onion with garlic until onion starts to soften (5 minutes). Pour in pureed tomatoes. Stir in chopped tomato, herbs, Italian seasoning and red pepper flakes.


Step 2:

Bring to a boil, then reduce heat to low, cover, and simmer 30 minutes. Stir in tomato paste and simmer an additional 30 minutes. While waiting for water to boil, chop onion and pepper and mince the garlic. Chop basil, oregano, and parsley. Have ready a large bowl of iced water. Plunge whole tomatoes in boiling water until skin starts to peel (1 minute). Remove with slotted spoon and place in ice bath. Let rest until cool enough to handle, then remove peel and squeeze out seeds. Chop 8 tomatoes and puree in blender or food processor. Chop remaining 2 tomatoes and set aside.


Step 3:

In a large pot or Dutch oven over medium heat, cook onion with garlic until onion starts to soften, 5 minutes. Pour in pureed tomatoes. Stir in chopped tomato, herbs, Italian seasoning and red pepper flakes. Bring to a boil, then reduce heat to low, cover and simmer 30 minutes.
