Grilled Salmon Pizza with Lime Mint Pesto

Im not talking about cooking with a reckless abandon Im seriously talking about cooking without eyesight. I made this recipe while blindfolded just to see if I could. Inspired by Christine Ha the first visually impaired competitor on "Master Chef".

- 2 limes
- 4 cups fresh mint and basil
- 2 cloves garlic
- ¼ cup extra virgin olive oil
- ½ lb grilled salmon filet flaked
- 1 cup sautéed mushrooms
- ½ red onion diced
- 1 cup fresh baby spinach leaves
- 1 × 4oz log of goat cheese crumbled
- 4 whole wheat pita breads
You may also need:
Butter Knife, Food Processor, Oven
Pre-heat oven to 425o. Pulse lime juice, mint, basil garlic and olive oil in food processor until smooth. Spread pesto evenly over pita breads. Top pitta breads with salmon, mushrooms, onion, spinach and goat cheese. Bake for 10 minutes or until cheese starts to melt.
