- 3 whole breasts boneless skinless chicken breasts
- 1 large egg
- 2 cups seasoned Italian bread crumbs
- 2 tbsp canola oil
- 3 cups tomato sauce
- ½ cup low-fat mozzarella cheese
- 1 tbsp parmesan cheese
- ¼ cup fresh parsley
You may also need:
A Pot, Bowl, Plate, Skillet, Spoon, Whisk
Lightly beat the egg in a pie plate or large soup bowl. Put the breadcrumbs in a separate dish. Dip chicken in egg and dredge in breadcrumbs.
Cook chicken in canola oil in a large skillet over medium-high heat until browned on both sides.
Spoon tomato sauce over chicken and bring to a boil. Cover, reduce heat, and simmer for about 10 minutes.
Sprinkle with cheeses and parsley. Cover and simmer 5 additional minutes or until cheeses melt.
This looks like a great weeknight recipe that will please my two teenagers. I will try it this week!
