Chicken and Broccoli Alfredo

A very simple and family pleasing meal. I make this for my family all the time, and they love it! It is also very easy to substitute other veggies or protein in with the sauce, the the cooking instructions will stay the same.

- 1 Package of pasta (Penne, Rotelle, or Rotini)
- 2 cups fresh or frozen broccoli florets
- 1 Small onion, Diced
- 1 Jar Light Alfredo (such as Classico)
- 2 Cloves Garlic, Minced
- 2 Boneless, skinless chicken breasts cut into 3" strips
- 4 Tablespoons Olive Oil, separated
- salt and pepper to taste
You may also need:
A Pot, Skillet, Spoon
Boil large pot of water and cook pasta according to box directions.
While water is heating up, heat 2 Tablespoons of Olive oil in a large skillet over medium high heat. When hot, cook onions until tender. Then add fresh broccoli (if using frozen, wait until later). Cook broccoli for 2-3 minutes. Then remove onions and broccoli from the pan.
Heat 2 more tablespoons of oil in the pan until hot and then add chicken. salt and pepper to taste. Once chicken is browned, add onion and broccoli back into pan (if using frozen broccoli, and them in now). Stir until all are heated through.
Stir in Garlic, and then immediately mix in the jar of Alfredo sauce. Bring to a boil, then reduce heat to medium-low and simmer. If possible, cover, but you don't need to.
nce the pasta is done cooking, reserve 1/2 cup of the pasta water, and drain the rest. Return pasta to large pot. Pour Alfredo mixture into the pasta and stir until coated. Use a little bit of the pasta water to help coat the sauce to the noodles (you may not need to use the whole 1/2 cup)
