Cherry Balsamic Pork Chops

- ½ cup balsamic vinegar
- 6 thin cut boneless pork chops
- 2 Tablespoons butter
- ½ cup chopped dry cherries
- 1 large shallot finely diced
You may also need:
Kitchen Knife, Plate, Sealable Bag
Marinate pork chops overnight in vinegar.
Heat butter in a large sauté pan. Add shallots and cherries, then cook over medium heat until soft.
Remove pork chops from marinade, add to sauté pan, and brown on both sides (approximately 2 minutes per side).
Remove pork from pan, add balsamic marinade back to pan, and heat, scraping brown bits off bottom of pan. Continue cooking until reduced by half.
Pour sauce over plated pork and serve.
