Caterpillar Bagel Bites

- ½ cup low-fat cream cheese
- 6 whole mini bagels
- 1 split English muffin
- 2 cups white button mushroom, sliced
- 1 whole red bell pepper, thinly sliced strips
- 12 whole cherry tomato, sliced in half
- 1 cup carrot, cut into round discs
- ½ cup fresh basil, whole leafs
- ½ cup fresh oregano, whole leafs
- 1 cup pepperoni, sliced
- ½ cup pesto
- ½ cup mozzarella, sliced
You may also need:
Aluminum Foil, Baking Sheet, Butter Knife, Kitchen Knife, Oven, Parchment Paper, Spoon
Slice bagels in half. Slice English muffin in half.
Thinly slice the peppers. Slice tomatoes in a u-shape. Cut the carrots into rounds.
Place foil or parchment paper on cookie sheet. Spread 1/2 teaspoon cream cheese under each bagel and English muffin to hold them in place. Arrange the cut bagels on a cookie sheet in the shape of a caterpillar ending with the English muffin for a head.
Dab a little cream cheese on the mushroom slices as glue and stick them under the bagels for legs.
Paint the surface of bagels and English muffin with sauce and arrange the Mozzarella and toppings.
Use pepper slices as antenna, carrots as eyes, pepperoni as a nose or eyes, tomato slice for lips, herbs as spots -- Use your imagination and create your own caterpillar.
Bake it until the cheese is just starting to brown (about 8 minutes). Cool slightly, and serve.
