I'm interested in adding healthier vegetables into my diet, but have trouble with some of them. For me, pureed and mashed veg seem to be easier to handle, but soup and curry can only go so far. I recall seeing a recipe for mac 'n' cheese where carrot replaced part of the cheese sauce, and am hoping to find more recipes like that. Any suggestions?

One vegetable that I really enjoy (especially this time of year) is winter squash. With the excellent prices and ready availability it may be a tasty option for your quest. Butternut Squash macaroni cheese (http://www.twopeasandtheirpod.com/butternut-squash-mac-and-cheese/), Butternut Squash Soup (you can even mix in zucchini), roasted spaghetti squash with pasta sauce, roasted acorn squash with a dash of syrup or simply plain... The vibrant flavors, hearty texture, and satisfying feeling you receive from this nutrient-rich veg are incomparable on a cold autumn day.
