A neighbor gave me a bottle of balsamic vinegar yesterday, since she heard about my adventures in cooking and doesn't cook much herself.

I've honestly never used balsamic vinegar before and other than using it in salad dressings, I have no idea what it might be used with. Any suggestions on recipes or dishes I can try making?

I put it in all kinds of things! Dressing and marinades, obviously, but I've also used it in soups and heartier dishes.

The flavor is really warm and umami-ish, but it also has sweetness and the sour tang of vinegar. One of my favorite places to use it is in hot and sour soup. I'm sure I've put in more traditional stews as well.

I only recently discovered the joy of balsamic vinegar, but man, it is amazing. A month or so ago my boyfriend and I marinated some portobello mushrooms in a mixture of balsamic vinegar, garlic, and some other spices (I don't remember exactly what) and then broiled them with some cheese. I can't remember exactly how the recipe goes, but I'm sure you could do something similar. It was absolutely incredible...and now I'm hungry, even though I just ate breakfast...

If you reduce balasamic vinegar (cook out some of the liquid until it is thicker) it's a great topping for fresh strawberries, or you know, the classic bruschetta (with toasted french bread brushed with olive oil and garlic, topped with chopped tomatoes and basil sprinkled with fresh grated parmesean and drizzled with a balsamic reduction).

Excellent ideas to use up this versatile ingredient! What has worked for you, Dave?

I wanted to also share a basic low-calorie salad topping. I love to add a splash of Alessi's White Balsamic Vinegar with a dash of Salad Supreme to add a zesty topping for a veggie dish. Absolutely delicious!

Though next time I break out the balsamic, I may have to dive into the portobello mushroom scene... ;)
