Cabanachinni Cake

Carrot, Banana and zucchini cake may sound funky to many people. I use creative marketing and called it cabanachinni cake instead. It's a fun name for a delicious cake.

  1. 4 Eggs
  2. ½ Cup Butter, melted and cooled
  3. ¼ cups Low Fat Sour Cream
  4. ½ cups Applesauce
  5. 1 × 2tbsp. Pure Vanilla
  6. 1 × 1-1/2 C Turbinado (Raw) Sugar
  7. 2 Bananas, mashed
  8. 2 cups Carrot
  9. 1 cup Zucchini
  10. 3 cups Whole Wheat Flour
  11. ¼ Tsp Baking Powder
  12. 1 Tsp Baking Soda
  13. 1 Tsp Salt
  14. 3 Tsp Cinnamon, ground
  15. 1 Tsp Ginger, ground
  16. ½ Tsp Cardamom, ground
  17. ½ Tsp Nutmet, ground

You may also need:

Bowl, Muffin Tin, Oven, Spoon, Whisk

For anyone counting carbs, keep portion size in mind. One 2"x2" slice of cake counts as one carb serving. Just because this cake has produce in it, does not mean you can eat as much as you want :(

Preheat oven to 350 degrees. Grease and flour cake pan or muffin tins. Beat eggs well in large bowl, mix in butter, applesauce, vanilla and sugar. Stir in banana, mix well. Stir in carrot and zucchini. Whisk together dry ingredients in another bowl. Stir dry ingredients into wet, without over mixing. Pour mixture into a 9x13 cake pan. Bake for 45 minutes to an hour or until toothpick inserted in center comes out clean.
