In a high-speed blender, blend the watermelon (seeds and all) and lime juice until smooth. The mixture will be the consistency of juice. If you’re in the mood for an extra smooth and silky drink, pour the mixture through a fine mesh strainer to catch any bits of seeds that didn’t get pulverized in the blender.
Put the mint in a large mason jar and pour the watermelon drink over the leaves. Close the lid tightly and chill in the refrigerator for at least a couple hours before serving.
When in the mood for a sweet, refreshing drink infused with detoxifying elements, reach for your mason jar of pretty pink watermelon juice and enjoy. Sit back, relax, and pat yourself on your healthy back. Cheers!
