Vegetarian Taco Salad

My mom always makes this classic salad for potlucks and I've always loved it. After I became a vegetarian though I missed it immensely and whipped up a bean-based version.

  1. 1 (14oz) can of beans (your choice, I like to use garbanzo)
  2. 1 taco seasoning pack
  3. 1 small onion, chopped
  4. 1 head of lettuce, shredded
  5. 2 tomatoes, diced
  6. 1 bag of cheese (your choice, I prefer cheddar jack)
  7. 1 bag of regular Doritos, crumbled
  8. 1 × French or Catalina dressing

You may also need:

Skillet, Spoon

Step 1:

Drain and rinse beans. Roast on skillet with onion and some water until semi-cooked. Then follow the directions on the taco seasoning packet to add to the beans.

Step 2:

While taco beans are cooking toss together lettuce, cheese, tomatoes, and Doritos.

Step 3:

When the beans have absorbed all the liquid add to the lettuce mix and stir well. Cover with dressing until desired texture. Serve right away!

Step 4:

If you want to serve this later, or on another day, keep all tomatoes, dressing, and lettuce mix separate otherwise it'll get mushy.
