Vegetarian Taco Salad

My mom always makes this classic salad for potlucks and I've always loved it. After I became a vegetarian though I missed it immensely and whipped up a bean-based version.

- 1 (14oz) can of beans (your choice, I like to use garbanzo)
- 1 taco seasoning pack
- 1 small onion, chopped
- 1 head of lettuce, shredded
- 2 tomatoes, diced
- 1 bag of cheese (your choice, I prefer cheddar jack)
- 1 bag of regular Doritos, crumbled
- 1 × French or Catalina dressing
You may also need:
Drain and rinse beans. Roast on skillet with onion and some water until semi-cooked. Then follow the directions on the taco seasoning packet to add to the beans.
While taco beans are cooking toss together lettuce, cheese, tomatoes, and Doritos.
When the beans have absorbed all the liquid add to the lettuce mix and stir well. Cover with dressing until desired texture. Serve right away!
If you want to serve this later, or on another day, keep all tomatoes, dressing, and lettuce mix separate otherwise it'll get mushy.
