Mediterranean Salsa for the Mom on the Move
Recently, life has been hectic.
Attempting to put a delicious AND nutritious meal on the table every evening has become more of a challenge than ever. In addition to our handsome little three-month-old son who does a fantastic job of distracting this new mom, our family is in the process of moving into a new home to accommodate our growing size. This means that after work I have a choice to make: cook dinner, play with the kiddo, or pack and purge. If the kiddo is awake, he clearly wins. But during naps and baby wearing evenings, I’m too busy boxing up our things and sorting the rest into our giveaway/garage sale pile.
Thankfully I have a handful of go-to recipes in my arsenal that are quick and easy.
Black bean quesadillas. Pulled pork sandwiches. Mexican caviar with veggies or tortilla chips. Vegetarian chili (loaded with veggies!). Roasted turkey and sweet potatoes. Almond chicken. Hummus and avocado rollups. Stir-fry. Lentil soup with whole grain crackers…
And, now this: A delicious Mediterranean Salsa created by Sophistamom. This simple recipe is perfect for those on-your-feet evenings, as it is more like an appetizer than a sit down meal (though I do encourage you to sit down if you can! Studies show we eat less and feel more satisfied when we do.), and thanks to the garbanzo beans, feta, and EVOO for extra satiating fiber, protein, and healthy fats.
