One of the best things about summer is eating an abundance of in-season fruits, especially blueberries. They just don’t taste the same when they’re not fresh and local! Those plump, juicy, sweet-tart little cuties are delicious eaten on their own, blended into smoothies, made into jam, and sprinkled into oatmeal, but sometimes we deserve something extra special – a little decadence.
After picking up some fresh berries from my local farmer’s market, my heart was set on creating a dessert that combines some of my favorite flavors: blueberry, lemon, and coconut. My Lemony Coconut Macaroon Bites are quick, easy, and, best of all, a no-bake recipe! Because it’s a raw dessert, the nutritional value of the ingredients is not altered in any way. Bonus!
These Macaroon bites are a re-creation of a traditional coconut macaroon, but without all the fuss. They’re perfect for summertime barbecues, a picnic with your honey, baby showers, potlucks, wherever and whatever! They’re the perfect size for those times that we have a hankering for something sweet but aren’t in the mood for post-dessert guilt. The fresh blueberry sauce really makes these macaroons shine.
