Halibut with Grapefruit Salsa

Savory and sweet for those who love fish or want to learn to love fish. This dish combines the sweet taste of grapefruit with pepper and parsley to enhance the taste of fresh halibut.

- 1 cup Ruby Red Grapefruit Segments
- ¼ cup Grapefruit Juice
- 1 TSP Grapefruit Zest
- 1 Fennel Bulb
- ¼ cup Olive Oil
- 2 TBSP Pitted Olives
- 2 TBSP Parsley Leaves
- 1 TSP Salt
- ⅛ TSP Red Pepper Flakes
- ¼ TSP Ground Pepper
- 4 Halibut fillets
You may also need:
Bowl, Kitchen Knife, Oven, Parchment Paper, Plate, Spoon
Mix together the grapefruit juice and zest. Slice the fennel bulb in half lengthwise, and proceed by slicing the entire bulb thinly. Mix fennel into the bowl with the grapefruit. Add the olive oil, olives, parsley, 1/2 teaspoon salt, and red pepper flakes. Stir until evenly mixed.
Add the Halibut fillets to a parchment-lined roasting pan. Sprinkle with remaining 1/2 teaspoon of salt and pepper and bake for 10 to 12 minutes (or until fish begins to flake).
Once fish has cooked thoroughly, place each fillet onto a dinner plate, and add a serving of the grapefruit salsa on top.
Serve and enjoy.
