Chili, Cheddar and Ale Corn Bread

Ale gives these delicious corn bread squares a light fluffy texture.

  1. 1 cup yellow cornmeal
  2. 1 cup flour
  3. ½ teaspoon salt
  4. ¼ cup chopped green chilis
  5. ¼ cup poblano peppers: roughly minced
  6. ¼ cup granulated sugar
  7. 4 teaspoons baking powder
  8. ½ cup milk
  9. ½ cup Founders Harvest Ale
  10. 1 cup Cheddar cheese, grated
  11. 1 egg, beaten

You may also need:

Baking Sheet, Bowl, Kitchen Knife, Oven, Spoon


Preheat oven to 350 degree F. Grease a 9 by 13 by 2-inch baking pan. Combine dry ingredients: flour, cornmeal, sugar, baking powder, and salt in a large bowl. In a separate bowl, combine the milk, eggs, and beer. With a wooden spoon, stir the wet ingredients into the dry until most of the lumps are dissolved. Mix in the poblanos, chilies and cheese. Pour the batter into the prepared pan, smooth the top. Sprinkle with grated Cheddar, if desired. Bake for 30 to 35 minutes, or until a toothpick comes out clean. Cool and cut into large squares.
